Classic Lamington Recipe

Ingredients:

For the sponge cake:

  • 1 cup (220g) caster sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup (150g) self-raising flour, sifted
  • 125g unsalted butter, melted and cooled

For the chocolate icing:

  • 3 ½ cups icing sugar
  • ½ cup cocoa powder
  • 3 tbsp unsalted butter, melted
  • ½ cup milk

For coating:

  • 2–3 cups desiccated coconut

Instructions:

  1. Bake the sponge:
    • Preheat the oven to 180°C (350°F). Grease and line a 20cm square baking tin.
    • Beat eggs, sugar, and vanilla until pale and fluffy. Gently fold in the sifted flour, then stir in melted butter.
    • Pour into the tin and bake for 25–30 minutes or until a skewer comes out clean. Let it cool completely. Chill or freeze slightly for easier cutting.
  2. Prepare icing and coat:
    • In a bowl, combine icing sugar, cocoa, melted butter, and milk until smooth.
    • Cut cake into squares. Dip each piece quickly into the chocolate icing, then roll in desiccated coconut. Place on a rack to set.
